Golden Turmeric Vegetable Soup

Ingredients
- 1 sweet potato, cubed small
- 1 carrot, sliced
- 1 cup cauliflower florets
- 2 cups low-sodium vegetable broth
- 1 tsp ground turmeric
- ½ tsp ground black pepper (essential for absorption)
- ½ cup coconut milk
How to make it
- Add the sweet potato, carrot, cauliflower, and broth to a pot.
- Simmer 20 minutes until the vegetables are tender.
- Blend a third of the soup and stir it back in for body — or blend it all on a tender day.
- Stir in the turmeric, black pepper, and coconut milk. Serve warm.
