Quinoa & Black Bean Healing Bowl
Iron-rich beans meet vitamin C from lime and tomato — the Iron–Vitamin C Engine that rebuilds red blood cells and fights fatigue.
Gentle for metallic taste, low appetite, a good day.
Ingredients
- 1 cup quinoa, rinsed
- 1 can black beans, rinsed
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- Juice of 1 fresh lime
- 2 Tbsp cilantro, chopped
- 1 Tbsp extra virgin olive oil
- ½ tsp cumin
How to make it
- Cook the quinoa in 2 cups water, about 15 minutes.
- Warm the beans with cumin.
- Assemble: quinoa, beans, tomatoes, avocado.
- Finish with olive oil, cilantro, and a generous squeeze of fresh lime — the lime is doing clinical work here, not just flavor.
