How to make it

  1. Heat the oven to 350°F. Blend the oats into a fine flour.
  2. Whisk together the pumpkin, almond milk, maple syrup, and vanilla.
  3. Fold in the oat flour, cinnamon, nutmeg, baking powder, and baking soda until just combined, then the walnuts.
  4. Pour into a lined muffin tin and bake 18–22 minutes, until a toothpick comes out clean.
