Olive-Oil Mashed Potatoes
Smooth, soft, and comforting with no chewing required. Olive oil (or butter) packs in extra calories in a form that's easy to eat when appetite is low.
Gentle for a sore mouth, low appetite.
Ingredients
- 3 medium potatoes, peeled & cubed
- 3 tbsp olive oil or butter
- 1/4 cup warm milk
- 1/2 tsp salt
- Optional: a little soft cheese
How to make it
- Boil potatoes in salted water until very tender, ~15 min.
- Drain well.
- Mash with olive oil and warm milk until smooth.
- Add more milk for a softer, looser texture. Serve warm.
- Tip: Make extra-smooth (even use a ricer) for a very sore mouth. Add cheese or gravy for more calories.
