Make-Ahead Beef & Vegetable Stew
A 'batch and bank' recipe: cook a big pot on a strong day and freeze portions, so hard, fatigued days need only a quick reheat with a hot, nourishing meal ready.
Gentle for fatigue, a good day.
Ingredients
- 1 lb stewing beef, cubed
- 2 carrots, chopped
- 2 potatoes, cubed
- 1 onion, chopped
- 4 cups low-sodium broth
- 1 tbsp olive oil
- 1/2 tsp salt, herbs to taste
How to make it
- Brown beef in oil in a large pot.
- Add onion, cook 3 min; add carrots, potatoes, broth.
- Simmer covered until beef is tender, ~1.5 hrs.
- Cool, then portion into containers and freeze.
- Tip: Freeze in single-serving containers, labeled with the date. Reheat gently until piping hot before eating.
