Lentil Vegetable Healing Soup
Folate-rich lentils for DNA repair, finished with fresh lime — because vitamin C converts plant iron into a form your body can actually grasp.

Ingredients
- 1 cup brown lentils, rinsed
- 2 carrots, diced
- 2 celery stalks, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 1 tsp cumin
- Juice of ½ lime, added at serving
- 1 Tbsp extra virgin olive oil
How to make it
- Soften onion, garlic, carrot, and celery in the oil, about 5 minutes.
- Add lentils, cumin, and broth. Simmer 30–35 minutes.
- Ladle into bowls and finish each with a fresh squeeze of lime.
