Lemon Orzo Pasta Salad

Ingredients
- 1 cup orzo
- Juice of 1 lemon
- 2 tbsp olive oil
- 1/4 cup crumbled feta (pasteurized)
- 1/2 cucumber, chopped
- Salt; fresh herbs
How to make it
- Cook orzo; drain and cool.
- Toss with lemon, oil, and salt.
- Fold in cucumber, feta, and herbs.
- Chill and serve cold.
- Tip: Cold plus citrus is the key combo for metallic taste. Use pasteurized feta.
