Ginger Carrot Immune Soup
Fresh gingerol is a natural anti-emetic — this soup is engineered to settle the stomach while still feeding the immune system.
Gentle for nausea, a sore mouth.
Ingredients
- 6 large carrots, chopped
- 1 Tbsp fresh ginger, grated
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- ½ can full-fat coconut milk
- 1 Tbsp extra virgin olive oil
How to make it
- Soften the onion and garlic in olive oil over medium heat.
- Add carrots, ginger, and broth; simmer 20 minutes.
- Blend until completely smooth, then stir in the coconut milk.
- Serve in small, warm bowls.
