Gentle Ginger Rice Congee

The blandest, most forgiving thing in the kitchen — slow-simmered rice porridge with a whisper of ginger. Low-fat and starchy is exactly what an unsettled stomach tolerates best.

Gentle Ginger Rice Congee

Gentle for nausea, a sore mouth, low appetite.

Ingredients

How to make it

  1. Combine the rice, broth, and ginger in a large pot.
  2. Simmer gently 45–50 minutes, stirring now and then, until the grains break down into a soft porridge.
  3. Add a little more broth or water if it thickens too much.
  4. Season lightly and, if it helps, stir in the olive oil for a few soothing calories.
