Chilled Cucumber Avocado Soup
Served cold and completely smooth, this soothes a tender mouth while creamy avocado slips in concentrated, calorie-dense plant fats — nourishment without needing to chew.
Gentle for a sore mouth, metallic taste, low appetite.
Ingredients
- 1 ripe avocado
- 1 cucumber, peeled and seeded
- 1 cup unsweetened almond milk (or coconut milk, for more calories)
- 1 Tbsp fresh lime juice
- 2 Tbsp fresh mint or cilantro
- 1 pinch sea salt
- cold water, to thin
How to make it
- Add everything to a blender.
- Blend until completely silky, thinning with cold water to the texture you want.
- Chill 20 minutes.
- Serve cold, in a small bowl — the coolness is part of the comfort.
