Citrus-Marinated Chicken Skewers

Marinating meat in citrus or vinegar is a classic trick to counter the metallic/off taste that makes meat unappealing during chemo. A satisfying main for a stronger day.

Citrus-Marinated Chicken Skewers

Gentle for metallic taste, a good day.

Ingredients

How to make it

  1. Whisk juices, oil, garlic, salt into a marinade.
  2. Add chicken; marinate 30 min–2 hrs in the fridge.
  3. Thread onto skewers.
  4. Grill or broil ~4 min per side until cooked through (165°F).
  5. Tip: The acid marinade is the whole point for metallic taste. Cook chicken fully (immune systems run low).
