Soothing Chicken & Rice Soup (Congee-style)
Bland, warm, and easy to swallow. Rice cooked soft into a porridge is one of the most tolerated foods during treatment; the broth adds gentle salt and protein.
Gentle for nausea, a sore mouth, low appetite.
Ingredients
- 1/2 cup white rice, rinsed
- 6 cups low-sodium chicken broth
- 1 cup cooked shredded chicken
- 1/2 tsp salt (to taste)
- Optional: grated ginger, a little soft carrot
How to make it
- Combine rice and broth in a pot; bring to a boil.
- Reduce to a low simmer, stir occasionally, ~40 min, until rice breaks down and it's porridge-like.
- Stir in shredded chicken; warm through.
- Add water/broth to thin as needed. Serve warm, not hot.
- Tip: Serve warm rather than steaming if the mouth is sore. Freezes well — a good one to bank on a good day.
