Healing Soups

Soothing Chicken & Rice Soup (Congee-style)

Bland, warm, and easy to swallow. Rice cooked soft into a porridge is one of the most tolerated foods during treatment; the broth adds gentle salt and protein.

Soothing Chicken & Rice Soup (Congee-style)

Gentle for nausea, a sore mouth, low appetite.

Ingredients

How to make it

  1. Combine rice and broth in a pot; bring to a boil.
  2. Reduce to a low simmer, stir occasionally, ~40 min, until rice breaks down and it's porridge-like.
  3. Stir in shredded chicken; warm through.
  4. Add water/broth to thin as needed. Serve warm, not hot.
  5. Tip: Serve warm rather than steaming if the mouth is sore. Freezes well — a good one to bank on a good day.
