Apple Cinnamon Soft Muffins
Soft, moist, and naturally sweetened — soluble fiber from apple and oats gives steady energy in a portable form for the days when sitting down to a meal feels like too much.

Ingredients
- 1 ½ cups rolled oats (blended into flour)
- 1 cup unsweetened applesauce
- 1 apple, finely diced
- ⅓ cup pure maple syrup
- ½ cup unsweetened almond milk
- 1 tsp cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- 1 Tbsp ground flaxseed
How to make it
- Heat the oven to 350°F. Blend the oats into a fine flour.
- Whisk the applesauce, maple syrup, almond milk, and flaxseed.
- Fold in the oat flour, cinnamon, baking powder, and baking soda, then the diced apple.
- Spoon into a lined muffin tin and bake 20–24 minutes, until set and a toothpick comes out clean.
