Whipped Ricotta & Spinach Puree
Whole milk ricotta cheese provides a soft, calcium-rich protein base. Blending it with well-cooked spinach incorporates iron and vitamins into a velvety green cream that can be eaten effortlessly with a spoon.
Gentle for a sore mouth.
Ingredients
- 1/2 cup whole milk ricotta cheese
- 1/2 cup fresh spinach leaves
- 1 tsp olive oil
How to make it
- Steam the spinach leaves in a splash of water for 2 minutes until fully wilted and soft.
- Drain the spinach well and press out any excess water.
- Place the spinach, ricotta cheese, and olive oil into a food processor and blend until perfectly whipped and smooth.
