Whipped Ricotta & Spinach Puree

Whole milk ricotta cheese provides a soft, calcium-rich protein base. Blending it with well-cooked spinach incorporates iron and vitamins into a velvety green cream that can be eaten effortlessly with a spoon.

How to make it

  1. Steam the spinach leaves in a splash of water for 2 minutes until fully wilted and soft.
  2. Drain the spinach well and press out any excess water.
  3. Place the spinach, ricotta cheese, and olive oil into a food processor and blend until perfectly whipped and smooth.
