Whipped Cauliflower & Olive Oil Cream Soup
Cauliflower purees into a decadent, smooth texture that delivers comforting substance without bulk. A small drizzle of extra virgin olive oil introduces clean, healthy plant fats to help maintain weight when solid food feels unappealing.

Ingredients
- 1.5 cups cauliflower florets
- 1 cup low-sodium vegetable broth
- 1 tsp extra virgin olive oil
How to make it
- Sauté the cauliflower florets in olive oil in a small pot for 2 minutes to coat.
- Pour in the vegetable broth, bring to a boil, and simmer for 12 minutes until completely soft.
- Puree using an immersion blender until completely creamy, uniform, and smooth. Let cool to lukewarm.
