Turkey-Berry Sweet Potato Hash
Sweet potatoes deliver sustained, slow-burning complex carbohydrates to help lift profound fatigue. Tossing them with a small spoonful of lean ground turkey provides iron and B vitamins, while a handful of blueberries adds a bright antioxidant contrast.
Gentle for fatigue, a good day.
Ingredients
- 1/2 cup sweet potato, peeled and finely diced
- 1 oz lean ground turkey
- 2 tbsp fresh blueberries
- 1 tsp coconut oil
How to make it
- Heat coconut oil in a small skillet over medium heat. Add the finely diced sweet potato and cook for 10 minutes until tender.
- Add the ground turkey to the skillet, breaking it up completely into tiny crumbles as it cooks through (about 5 minutes).
- Toss in the blueberries during the final 60 seconds of cooking just until they soften slightly.
