Turkey-Berry Sweet Potato Hash

Sweet potatoes deliver sustained, slow-burning complex carbohydrates to help lift profound fatigue. Tossing them with a small spoonful of lean ground turkey provides iron and B vitamins, while a handful of blueberries adds a bright antioxidant contrast.

How to make it

  1. Heat coconut oil in a small skillet over medium heat. Add the finely diced sweet potato and cook for 10 minutes until tender.
  2. Add the ground turkey to the skillet, breaking it up completely into tiny crumbles as it cooks through (about 5 minutes).
  3. Toss in the blueberries during the final 60 seconds of cooking just until they soften slightly.
