Soft Soft-Boiled Egg over Warm Potato Mash

Gold potatoes provide a smooth starch foundation that coats a raw mouth nicely. Topping a soft, milk-thinned potato mash with a soft-boiled egg adds high-quality protein and B vitamins, while the liquid yolk keeps the texture completely yielding.

Gentle for a sore mouth, fatigue.

How to make it

  1. Bring a small pot of water to a boil. Lower the egg into the water and boil gently for 6 minutes, then transfer immediately to ice water.
  2. Warm the thinned potato mash in a small dish and stir in the butter until melted.
  3. Carefully peel the egg, place it directly over the potato mash, and slice it open to let the soft yolk run through the potatoes.
