Soft Poached Egg over Pureed Sweet Potato
Sweet potatoes offer slow-release, energy-sustaining complex carbohydrates to help lift fatigue. Topping a smooth sweet potato mash with a softly poached egg introduces a complete protein with a liquid yolk, creating a texture that demands no jaw effort.

Ingredients
- 1/2 cup sweet potato puree (warmed)
- 1 large egg
- 1 tsp butter
How to make it
- Bring a small pot of water to a gentle simmer. Crack the egg into a small cup, then slide it carefully into the simmering water.
- Poach for 3 minutes until the white is set but the yolk remains completely liquid.
- Spoon the warm sweet potato puree into a small bowl and stir in the butter.
- Lift the poached egg out with a slotted spoon, place it directly over the sweet potato mash, and break the yolk open before eating.
