Soft Mashed White Fish Paste

Flaky white fish like sole or tilapia is extremely mild. Poaching it in milk or broth keeps it moist, and mashing it into a fine paste ensures there are no dense pieces to aggravate mouth sores.

How to make it

  1. Gently simmer the fish fillet in the vegetable broth in a small covered skillet for 5–6 minutes until it flakes instantly.
  2. Remove the fish from the liquid and transfer to a plate.
  3. Mash thoroughly with a fork along with the butter until it forms a soft, uniform paste with no distinct chunks.
