Smooth Cream of Broccoli Bisque
Broccoli is an excellent source of vitamin C and folate, which actively assist in red blood cell generation. Chopping and boiling the heads down completely before blending eliminates any rough fiber edges, leaving a silk cream soup.
Gentle for a sore mouth, fatigue.
Ingredients
- 1 cup broccoli florets, chopped small
- 1.5 cups low-sodium vegetable broth
- 1 tbsp cream cheese or plant cream
How to make it
- Simmer the broccoli florets in vegetable broth for 12 minutes until totally soft and losing color.
- Add the cream cheese, then process with an immersion blender until perfectly velvety. Let cool to room temperature.
