Silky Egg Ribbon & Bacon Broth
When solid meats feel too heavy or painful to chew, this dish channels the rich flavor of a traditional breakfast into a soft format. A single strip of well-rendered bacon flavor-infuses a mineral-rich bone broth, which is then thickened with delicate, easy-to-swallow egg ribbons.
Gentle for low appetite, a sore mouth.
Ingredients
- 1.5 cups chicken bone broth
- 1 large egg, thoroughly beaten
- 1 strip of bacon (cooked crisp, used only to flavor broth, then removed)
How to make it
- Heat the bone broth in a small pot with the crispy bacon strip for 10 minutes to infuse the savory flavor, then discard the bacon.
- Bring the broth to a very gentle simmer.
- Stir the broth in a circular motion with a spoon to create a whirlpool, then slowly drizzle the beaten egg into the current to form soft, effortless ribbons.
