Pureed Green Pea & Mint Soup
Green peas are a surprising source of plant-based protein and fiber. Pureeing them completely removes the outer skins, leaving behind a smooth, vibrant green soup that is refreshing when served cool.

Ingredients
- 1 cup frozen green peas
- 1 cup low-sodium vegetable broth
- 2 fresh mint leaves
How to make it
- Bring the vegetable broth and frozen peas to a boil, then simmer for 5 minutes.
- Add the mint leaves and immediately puree the soup on high speed until completely smooth.
- Strain through a fine sieve if any tiny pea skins remain. Serve at room temperature.
