Fluffy Steamed Egg & White Fish Custard
Whisking an egg with vegetable broth and a minute touch of flaked cod creates a delicate, melt-in-your-mouth custard when steamed. It provides highly bioavailable animal protein with almost no distinct chewing boundary.

Ingredients
- 1 large egg
- 1/2 cup low-sodium vegetable broth (cooled)
- 1/2 oz cooked cod fillet, flaked extra-fine
How to make it
- Whisk the egg and cooled vegetable broth together thoroughly, then strain through a fine sieve into a ramekin.
- Stir the finely flaked cod into the egg mixture and cover the ramekin tightly with foil.
- Steam over boiling water for 10 minutes until set like a soft gelatin. Let cool completely.
