Fluffy Steamed Egg Custard

This savory traditional dish cooks eggs with broth rather than frying them, resulting in a silkier texture than standard scrambled eggs. It slides down the throat effortlessly, avoiding any friction with sensitive oral tissues.

Gentle for a sore mouth.

Ingredients

How to make it

  1. Whisk the egg and cooled vegetable broth together thoroughly in a small bowl, then strain through a fine sieve into a small heatproof ramekin to remove any bubbles.
  2. Cover the ramekin tightly with foil.
  3. Place the ramekin into a steamer basket over boiling water, cover, and steam on low heat for 10 minutes until the custard is set like gelatin. Let cool significantly before serving.
