Chicken-Infused Golden Congee
White rice is simmered until it completely breaks down into a comforting, easy-to-swallow porridge. Infusing it with chicken bone broth and just a tiny shred of tender chicken breast creates a light, low-odor protein option that is incredibly gentle on a sensitive stomach.
Gentle for nausea, a sore mouth.
Ingredients
- 1/4 cup white jasmine rice
- 2 cups low-sodium chicken bone broth
- 1 oz cooked chicken breast, pulled into fine shreds
- 1/4 tsp ground turmeric
How to make it
- Combine the rice, chicken bone broth, and turmeric in a small pot and bring to a boil.
- Reduce heat to low, cover with a lid, and simmer for 35–40 minutes until the rice is velvety and broken down.
- Stir in the finely shredded chicken breast and cook for 2 minutes until hot. Let cool to a comfortable lukewarm temperature before eating.
